Last year, Dante Hess, whose Columbia County�based Milk Thistle has gained a cult Greenmarket following and a foothold at Momofuku Milk Bar, which transforms his product into Cereal Milk and soft-serve, introduced a new, value-added product: quasi-drinkable yogurt that’s so rich and thick you’ll need a spoon. Made only from the organic, batch-pasteurized milk of his pastured Jersey cows and live cultures, it’s a different creature entirely from the gummy, additive-laden stuff you find on supermarket shelves. Embellish it if you must with a drizzle of honey or maple syrup, or drink it straight for a pure, unmasked yogurt tang.
