    Doug Quinn, the bow-�tied proprietor who spent �nearly a decade bartending at P.J. Clarke’s , has created the throwback saloon of his dreams. Bartenders prepare regulars’ drinks as soon as they walk in and are quick to furnish �introductions between �patrons. The space is deep and narrow, with worn wooden floors and a high, burgundy-painted tin �ceiling, and paintings of iconic New Yorkers like Toots Shor and Joe Allen lining the walls. Men �outnumber women, but there’s plenty to appeal to all, including a cocktail �lineup focused on classics, like the Manhattan No. 2, served straight up with two whiskey-soaked filthy cherries.
