Airmail (Gin Variation)

This variation on the classic drink substitutes gin for rum.

Ingredients

1 1/2 oz. Hendrick's gin
3/4 oz. lemon juice
1/2 oz. honey syrup*
Top up Champagne

 

*Honey syrup: Combine one part hot water with two parts honey. Stir until honey dissolves. Refrigerate for up to one month.

Instructions

Combine all ingredients, except Champagne, in a cobbler shaker. Add ice. Shake and strain into a chilled flute. Top up with Champagne. (Published 2015)
