Beijing Bellini

Ingredients

1 oz White Peach Puree
1 oz Shaoxing Chinese rice wine (available at any Chinatown Liquor Store)
4 oz Blanc de Blanc Champagne or similar sparkling wine

Instructions

Add Shaoxing and peach puree in shaker tin and shake until combined. pour into Champagne vlute and top with Champagne. Garnish with white edible flower. (Published 2016)
