Rooftop Sunset

An Asian-inspired sparkling cocktail.

Ingredients

5 oz. Sparkling Pointe Méthode Champenoise (North Fork)
1 oz. Kintaro Shochu
1/3 oz. honey syrup (3 oz. honey, 3 oz. hot water, combined, then chilled - serves 8)
2 dashes Peychaud’s bitters

Instructions

Add sparkling wine to flute or coupe. Add honey syrup and shochu to mixing glass. Add ice and stir briefly to mix and chill. Slowly strain into prepared champagne flute or coupe. Carefully 'stab' in the bitters. A pinkish cloud will form. (Published 2015)
