4. Quattro’s Game Farm
Pleasant Valley, N.Y.
The birds: Heritage-breed Bourbon Reds ($8.59/lb.), Broad Breasted Whites ($3.99/lb.), and so-called “farm-raised wild” turkeys (they’re kept under massive circus-tent-like netting; $7.49/lb.), all reared under the supervision of octogenarian owner Carmela Quattrociocchi on “plenty of grass” and organically grown corn and oats.

5. Heritage Foods USA
The birds: Several pedigreed Norman Rockwell–esque varieties including Narragansett, Spanish Black, Standard Bronze, and Bourbon Red (from $74 to $114, depending on weight), meticulously raised on small Kansas farms. If you request a specific breed, they’ll do their best to accommodate you. New this year: kosher heritage turkeys.
