Having established a barbecue beachhead with Williamsburg’s Fette Sau, Joe and Kim Carroll (along with Joe’s dad, also Joe) are turning their attention to other regional gems at St. Anselm, the “haute snack bar” scheduled to open the moment their liquor license arrives. Of particular note on the meat-centric menu are deep-fried Newark-style hot dogs, pictured, and two-ounce burgers lovingly modeled after the White Manna sliders of Joe’s North Jersey youth. The pork-and-beef dogs are custom-made by Karl Ehmer and tucked into Napoli Bakery’s “pizza bread,” but the kitchen will concoct its own goetta and scrapple and fry everything in beef tallow (355 Metropolitan Ave., nr.
