Discuss the innovative dishes you're sampling at Hueso's communal table.  

Grab a seat under the twinkling lanterns at Alcalde. The two up-and-coming young chefs (with Mugaritz and Noma pedigrees) make elegantly simple food that incorporates local, seasonal ingredients and Mexican traditions. Try the grasshopper-cactus soup ($9) and suckling pig with green pipián salsa ($19), washed down with glass of Baja California wine ($10).

Nosh on dressed-up takes on Mexican staples at Cortez. Regional gastronomy gets the spotlight in dishes like beef-tongue tacos with caramelized onion and mozzarella cheese from the Jalisco highlands ($6) and fresh-caught Baja California escolar crusted with garlic-onion ash on a bed of leek confit ($12). The bar mixes up craft cocktails like the Tuba Cortez, made with fermented coconut water, mezcal, and peanuts ($6).

Be sure to sit facing the open kitchen at Hueso. Chef Alfonso Cadena’s menu is full of imaginative dishes like Pink Panther Milk, a twist on a Peruvian hangover cure called leche de tigre composed of raw tuna doused in a fuchsia-colored beet sauce ($17). The stark, all-white interior reflects the literal meaning of the restaurant’s name. Seating at a single long communal table is cozy, so plan to share both dishes and conversation with your neighbors.
